Spring Cake

180g gluten free flour
120ml milk
3 eggs
60g vegetable oil
100g fresh green peas
100g fresh broad beans
2 spring onions
100g pecorino romano grated
1 teaspoon baking powder

Pre-heat oven at 180ºC. Cook together in boiling water for 10-15 minutes the green peas, broad beans, and spring onions. Drain and let cool down.

In a bowl mix the eggs with the milk and oil with a fork. Add the grated cheese and mix well. Stir in the vegetables, baking powder and flour. Mix well and pour mixture into a loaf tin.

Bake at 180ºC for 40 minutes. Allow to cool down before serving.

Make sure you use gluten free baking powder
