Courgette spaghetti with tomato sauce

Serves 4
4 medium courgettes

15 sun-dried tomatoes soaked for 6 hours
600g ripe tomatoes without seeds
1 garlic clove
70g onion- chopped
30g extra virgin olive oil
The juice of 1 lemon
10 fresh basil leaves
3 stalk fresh thyme
50g chopped walnuts
2-3 tablespoon tamari sauce

“Grated cheese”
30g pine nuts
2 tablespoon nutritional yeast shaving
A pinch of pepper

Place walnuts in a cup and cover them with the tamari sauce. Place the remaining sauce ingredients in a high-powered blender or food processor. Drain the walnuts and add them to the sauce.

Grind the pine nuts with the yeast and pepper and keep aside. Spiralize raw courgettes and season with the  sauce. Sprinkle with the “cheese”. Serve at room temperature or heat up in the oven at 45ÂșC
