Makes 10
300g flour
1 egg
40g sugar
50g butter
100g sourdough (or 5 g fresh yeast)
60g water
50g milk
A pinch of salt

300g custard cream
2 tablespoons brown sugar
1 peach

Dissolve yeast in the water, add the flour, egg, milk, salt and sugar. Mix well then add the butter. Knead for at least 5 minutes until you have a smooth and soft dough. If necessary add a bit more water. Wrap dough in clingfilm and allow to rise for 3 hours. Roll out the dough with a rolling pin, cut out some circles with a round cutter and transfer them in a oven paper lined tray. Let rest for 1 hour. After this hour press down the middle of the circles with your fingertips. Put one tablespoon of custard in the middle, the sliced peaches and sprinkle with brown sugar.

Bake at 200ºC for 10 minutes. Enjoy lukewarm with a dust of icing sugar.
