Grated Paneer

Serves 4
• 225g grated paneer (available from most supermarkets, or you can make your own!)
• 1 large onion, sliced
• 2 tsp grated ginger
• 1 small tomato, finely chopped
• 1 green chilli, chopped
• 8 curry leaves
• 1 tsp black mustard seeds
• 1 tsp cumin seeds
• ½ tsp ground turmeric
• 1 tsp ground coriander
• 1 tsp rapeseed oil
• Salt to taste

Heat a non-stick pan before adding the oil.

Add the mustard seeds, cumin seeds and curry leaves. Once it starts sizzling, add the onion and cook on a  high heat for 4 minutes, stirring continuously.

Add the ginger and chilli, and cook for another minute.

Add the chopped tomato along with the remaining spices and mix well. Cook for another 2-3 minutes.

Stir in the grated paneer, cover the pan with a lid and cook on low heat for another 10 minutes before  serving.
